Hey Good Lookin'

Whatcha' got cookin'?

I've been craving Poppy seed Chicken Casserole this entire pregnancy. I make it at least once a week and could eat the entire dish in one sitting if I let myself. I don't even like to think about the calories in this.

It's great with vegetables or even a side salad! I sometimes serve it over rice too.



I usually boil 2 chicken breasts and lay them on a cutting board to cool. Then chop the chicken into small pieces and put them in casserole dish.

Sprinkle 1 tablespoon lemon juice over cut of chicken. Mix 1 can cream chicken soup with small container of sour cream and pour over chicken.

Sprinkle Poppy seeds over chicken and mixture. Melt 1 stick of butter and mix with 1 crushed roll of Ritz Crackers and spread on top. Bake at 350 till bubbly which is about 20 minutes in my oven but might be more or less in yours.

Tough, huh?

We had it tonight and it was delicious. Now I must go pull my apple pie out of the oven. Can you tell nesting has kicked in for me???

Ooooh I looove this. We make it too, but we don't use the poppyseeds, so I call it "Non-poppyseed chicken"... which is basically... chicken. :) No matter what it is, you can't beat it! So easy and SO WONDERFUL!! :)
