It's Spectacular!

My Mom makes this Chicken Spectacular recipe that is just well, spectacular! I made it for our supper club the other night since it was my turn to host and it was so easy to double the recipe. It also freezes well too so I'm going to make a few for when bb2.0 is born. 



Ingredients

  • 1 can of chicken broth
  • 1 cup of water
  • 1 box of Uncle Ben's uncooked wild rice
  • 3 cups cooked, cubed chicken breast
  • 1 can condensed cream of celery soup
  • 1 (4 ounce) jar diced pimento peppers, drained
  • 1 onion, chopped
  • 2 cans French-style green beans, drained
  • 1 cup mayonnaise
  • 1 cup shredded cheese
  • 1 can water chestnuts, drained and chopped
  • salt and pepper to taste

Directions

  1. Combine chicken breasts and chopped onion in a skillet and cook until chicken is done.
  2. Combine water, chicken broth and wild rice in a saucepan, and bring to a boil. Reduce heat, cover, and simmer until done.
  3. Preheat oven to 350 degrees.
  4. In a large bowl, toss together the cooked rice, chicken and onion, cream of celery soup, pimentos, green beans, mayonnaise, cheese, water chestnuts, salt, and pepper. Transfer to a casserole dish.
  5. Bake in the preheated oven for 30 -45 minutes, or until heated through.
