Potato and Corn Chowder

This is the best version of potato soup ever! 
I've finally decided to share my Mom's recipe because some of you have been to my house recently and requested it. I've been cooking it a lot lately, it's easy and delicious on a cold winters day.





Potato and Corn Chowder 

5lb bag of potatoes peeled and chopped
2 cans of cream corn
1 can rotel
1 onion chopped
4-6 celery sticks chopped
28oz chicken broth
2 bay leaves
1 teaspoon basil
½ teaspoon salt
1 teaspoon pepper

Mix all together in crockpot or large stock pot and cook on low until potatoes are soft
 (around 3-4 hours)

The last 30 minutes add ½ stick of butter and 1 cup of heavy cream

Serve with cornbread or crackers.
Top with cheese and bacon bits.
