mexican twist recipe

Is it just me or do you feel like you cook the same things for dinner every.single.week?
 We get into such a routine with the regular things we eat and get so tired of the same ole' thing.
 We love some mexican food at our house but I decided to change it up a bit. 
This is a super easy recipe that you can make and add anything you want for toppings. 


I just cooked a box of Jiffy cornbread mix in a 8x8 pyrex dish. Then I layered with refried beans, corn, homemade salsa, freshly shredded cheese, sour cream and cilantro. It was a big hit with the guys in my house. Parker and I liked it just the way it was but Graysen requested taco meat and black beans instead of refried added to his next time. Such a simple and quick dinner.
